Ritz Cracker Chicken Casserole :) If you like chicken pot pie, then you’ll love this! I start by taking three chicken breasts, patting them dry, drizzling them with oil, and seasoning them well on both sides. Then, I sear them in a pan with butter and cook them all the way through. Once they are cooked, I add the chicken to a bowl and shred it. Next, I add one can of cream of chicken soup, about one cup of sour cream, and a handful of cheddar cheese. I also add about half a bag of frozen vegetables. This recipe is very customizable, so you can use whatever vegetables you like or leave them out altogether. Mix everything together until well combined, then set it aside while you make the topping. For the topping, I crush about one and a half sleeves of Ritz crackers. I add just enough melted butter to coat the crumbs, roughly a couple of tablespoons, along with another handful of cheddar cheese. Mix everything together until well combined. Add the chicken mixture to an oven safe dish and sprinkle the Ritz cracker topping evenly over the top.
