Chicken with gravy is such a comfort meal! What was your favorite meal growing up? I start by slicing my chicken breasts thinner so they cook evenly. I drizzle a little olive oil over them as a binder, then season both sides really well. Set the chicken aside while you prepare the flour. Pour some flour onto a plate and season it with the same seasonings you used on the chicken. Take each piece of chicken and lightly coat it in the seasoned flour. Heat a skillet over medium-high heat and add bacon grease. You can also use vegetable oil if you prefer! Just make sure your grease or oil is hot enough before adding the chicken. If it isn’t hot enough, the oil can absorb into the chicken, making it soggy and causing the coating to fall apart. Lay each piece of chicken flat in the pan and let it fry for a few minutes before flipping. Try not to flip it back and forth! Letting it cook undisturbed helps create a nice sear and crispy crust while also helping the chicken stay together. Once the chicken is golden, crispy, and cooked through, remove it from the pan. For the gravy, add a couple tablespoons of butter to the pan. Once melted, add a little flour and whisk it together to make a roux. Make sure it is smooth and there are no lumps. Slowly add chicken broth, using as much as you like depending on how much gravy you want. Continue whisking until the gravy is smooth, thick, and creamy.
