If it’s smothered in gravy, you already know it’s comfort food in my home! I’m starting with 1 pound of ground beef, half a packet of onion soup mix, a couple spoonfuls of breadcrumbs, and one egg. I don’t really measure anything, but be careful not to add too many breadcrumbs or your patties can dry out. I season with my favorite seasonings and add a splash of Worcestershire sauce. Gently mix until everything is combined. Don’t overmix! Form into patties and sear them in a medium high skillet until cooked through. Remove them from the pan and set aside. Using the same skillet, I add bacon grease (you can use butter) and a sliced onion. I let the onion sauté until soft and fragrant, then sprinkle flour over top to make a roux. Once the flour is well combined, I slowly add beef broth. Add as much as you need depending on how much gravy you want. If it isn’t thick enough, you can add a cornstarch slurry. Mine took about 15 to 20 minutes to thicken. Add the patties back in and let them simmer in the gravy for a few minutes. For my mashed potatoes, I keep them simple. I peel the potatoes and boil them in chicken broth until fork tender. Then I mash them with butter, sour cream, heavy cream, and my favorite seasonings.
