Cheesy chicken & crescent roll casserole! Anything in a casserole just feels so nostalgic to me. definitely one of those meals that tastes like home :) Start by drizzling 2 chicken breasts with olive oil and seasoning them to taste. Bake uncovered at 350°F for about 30 minutes, or until the chicken is cooked through. Shred the chicken once it’s done. You can also use rotisserie or pre-shredded chicken to make this even easier! Mix the shredded chicken with a few handfuls of Colby cheese and a few heaping spoonfuls of sour cream. Add as much cheese and sour cream as you’d like until you have a creamy chicken mixture. Take 2 cans of crescent rolls and add a dollop of the chicken mixture to each one. Roll them up and place them in a greased or buttered oven-safe dish so they don’t stick. Bake uncovered at 350°F for 12 minutes. While the crescent rolls bake, make the sauce. In a saucepan over low heat, mix 1 can of cream of chicken, 1 can of milk, and a handful of cheese. Stir until smooth and creamy, then season to taste. Pour the sauce over the crescent rolls and bake uncovered at 350°F for another 25–30 minutes, or until golden brown and cooked through. They should be creamy and soft on the inside, with a golden, cheesy top.
