Jalapeño popper smothered chicken. Welcome back. And not for supper. We're having this jalapeno popper smothered chicken. And y'all, this one's one that you've got to save and try. Start out by frying up six pieces of bacon until they're crispy on both sides. When it's done, remove it onto a plate and save that bacon grease in your pot. Season your chicken breast with your favorite chicken seasoning. I've been loving this one from Fire and Smoke Society. It's literally the only thing that I put on the chicken because it's got all the flavor. Season both sides. You're gonna cook your chicken in that bacon grease on both sides until it's done. Once it's done, remove it onto a plate and make sure you save all those drippings in the pan. I added in three diced jalapeños. You can use more or less depending on the spice you want. And I sauteed them for just a few minutes. Then add in two tablespoons of flour and whisk that into your bacon grease and cook that for a few minutes to get rid of that flour taste. Then you're gonna slowly add in two cups of broth and whisk that while you're adding it. Add in one teaspoon of onion powder and salt and pepper to taste. Add in about a tablespoon of minced garlic. Mix it together and let it simmer for a few minutes to thicken. Once it's thickened, turn the heat down and add in half a block of cream cheese, cubed up, and stir until it melts. Once it's melted, you can add back in your chicken. Take that bacon you cooked earlier and crumble it all over the top.
