If you love deviled eggs, go ahead and give this deviled egg pasta salad a try because I promise you're gonna love it. I love these elbow noodles, just cook them to their done and then give them a rinse with some cold water. While your noodles are cooking, just add six boiled eggs into a bowl and I just mashed mine up with this potato masher that was my mama's and somehow I ended up with it. It's probably older than me, but you could just use a fork. Once you have your eggs mashed up, add in a cup of mayonnaise. We prefer Duke's, but you can use whatever you want. I'm not here to argue about mayonnaise. And if you've been here any amount of time, you know that I love pickles, so I added in half of a cup of diced up dill pickles. You can use more or less. And a little splash of pickle juice, but that's optional. I added in about half a teaspoon of paprika. It's better if you have smoked paprika, but I have not been able to find it the last two times I went to Walmart. Salt and pepper to taste. Just add it, mix it up, give it a taste. If it needs more, add a little more, but just remember once you add it, you can't take it back. This part's optional, but I do like to add a quarter of a diced up red onion. And I forgot to record me adding it, but I did go back in and add two tablespoons of mustard. And then just mix it up really well. Add in your noodles after they've cooled off some. Mix it and cover your noodles good. I like to top mine with some paprika and some chives. And then make sure you let it chill for at least a few hours.
