Okay, today I'm going to be making an apple pie white bean mash. First thing I'm gonna do is just cut up a small apple, put it in the pot with a quarter cup of water and simmer for about three to four minutes until the apples are soft. All right, those apples are nice and soft. And you can add any kind of white beans that you want. Today I'm using Great Northern beans. You're just gonna add one can, drained and rinsed. And you're gonna also add half a teaspoon of cinnamon and 1/8 teaspoon of nutmeg, a pinch of salt and maple syrup. I'm gonna just stir all this up and we're gonna cook it for about five to six minutes. While that's cooking, I'm just gonna go ahead and toast some chopped pecans for the topping. Now I'm just gonna go ahead and mash this down to my desired consistency. I'm not gonna use an immersion blender on this one because I want it a bit chunky, but I bet if you did, it would taste almost like apple butter. If you've got a little bit too much liquid, just let it sit there and cook until the liquid burns off to whatever you would like it to be. Okay, I've taken it off the heat and I'm just gonna add a splash of homemade vanilla extract. This smells so delicious. Look at that. Okay, now I'm just gonna go ahead and top it with my toasted pecans. Might have toasted that a little bit too long, but that's okay. It doesn't taste burnt at all. Oh my gosh, look at this.
