I waited three weeks for a booking before 9 and it turned one of the restaurant openings in this year. I booked again before the bill even arrived. This is Côte Basque, a new European grill from Andrew McConnell. Six years since he opened Gimlet. This one even on a Tuesday, it was packed. I brought five friends along so we can try the entire menu. Here's what's worth the potato bread with a satisfying crisp on the outside and super fluffy inside. If I could order only one dish, the anchovy matrimony. The fisherman soup, something like a lobster bisque. The calamari à la bruce, perfectly charred, not rubbery at all. The dark chocolate soufflé is a dish you can't leave without ordering. The best soufflé I've ever had. Not being dramatic. Of course, the beautiful flora's fritters. I personally felt Melbourne's dining scene has been a paste lately. This one that feels different. Book now. Because the next available before 9 PM is already a month away.
