Starch slurries are basically equal
parts water and starch. When a few
tablespoons get added to hot liquids,
the starches soak up the water and
create a thicker sauce in seconds.

and you told them you were roasting
a full chicken (ambitious, but they are
hot). What temperature do you use?

The key to roasting is making sure
that by the time the outside is crispy,
the inside is fully cooked and juicy.
450 would crisp the skin before the
inside cooks, and 300 would dry out
the inside before the skin crisped up.
